Do you have a grumpy woman (or man) in your life? Southern comfort food may be just the way to her or his heart. I recommend making plant-based biscuits and gravy for this purpose. Even if it doesn’t cheer your partner up, you still end up with a delicious meal.
I’m a man, so there is no fluff in this post. I know you don’t want to read about how I grew up in the South and how I have loved biscuits since childhood. Here is the recipe. If you don’t want to make the whole thing, check out the “feeling a little bit lazy” section at the very bottom.
Recipe: Plant-Based Biscuits and Gravy
Prep & Cook Time: 45 min
Serves 2
Biscuit Ingredients:
1 tbsp apple cider vinegar (or lemon juice)
1 c plant-based milk
2 c all-purpose flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
4 tbsp plant-based butter/margarine
Gravy Ingredients:
3 tbsp coconut oil
1 medium onion, diced
5 cloves garlic, diced
16 oz fresh mushrooms, thinly sliced
2 tbsp soy sauce
3 tbsp corn starch
1 c vegetable broth
1 c plant-based milk
½ tsp rosemary (fresh or dried)
salt and pepper to taste
Instructions for Biscuits:
- First, pre-heat your oven to 375.
- Make plant-based buttermilk by adding 1 tbsp apple cider vinegar to 1 cup of milk. I typically use almond milk, but other options, such as coconut or soy milk, may add flavor you would like. Instead of vinegar, you can also squeeze half of a lemon (roughly 1 tbsp lemon juice) into the milk.
- Sift 2 cups flour with 1 tbsp baking powder, 1/2 tsp baking soda, and 1 tsp salt. Don’t get this part mixed up or it will taste funny.
- Then add 4 tbsp cold plant-based butter by hand until the mixture is in small crumbles. Pour in the buttermilk and mix until a sticky dough forms.
- Place dough onto a floured surface and knead roughly 5-10 times. Roll out to about an inch in thickness and cut out desired-sized biscuits. BONUS: use a heart-shaped cookie cutter for this to show your grump how much you love him/her.
- Cook biscuits for about 10 minutes.
Instructions for Gravy:
- Heat a skillet over medium-high heat with 3 tbsp coconut oil. Add diced onion. Cook until translucent.
- Dice 5 cloves garlic, then add to onions and cook for 3 min.
- Add 16 oz finely sliced mushrooms and 2 tbsp soy sauce. Let cook until mushrooms reduce.
- Sprinkle the mixture with 1 tbsp corn starch. Do this 3 times. Stir until evenly coated. Then add 1 cup of vegetable broth and stir.
- Slowly pour in 1/4 cup buttermilk mixture at a time until desired gravy thickness is reached.
- Add 1/2 tsp rosemary and 1 tsp each of salt and pepper. Taste. Continue to add these spices until desired flavor is reached. You can also throw in some fresh or dried sage if you like.
That’s all there is to it. Call your grumpy spouse to the table and serve them this delicious meal!
