My plant-based chocolate chip banana bread muffins are a staple in this house. It makes sense, as bananas and bread are two of my favorite foods. However, I did not realize how frequently I was baking them until the following conversation took place.

Miss Grumpy Pants: “Why is there no sugar in the house? You bought a new bag last week!”
A few minutes later, after she has shuffled around the kitchen, still finding no sugar… “Why is there no butter? What have you been eating?”
Mr. Grumpy Pants: *hands her a chocolate chip banana bread muffin and attempts an innocent smile*

The small offering of the chocolate chip banana bread muffin was both an answer to her question as well as a tasty reason for her to stop grumping at me. It is not low in sugar or fat, but this recipe is delicious southern comfort food.

Recipe: Chocolate Chip Banana Bread Muffins

Prep & Cook Time: 30 min
Serves 6

Ingredients:

8 tablespoons of plant-based butter (such as Earth Balance)

1 cup sugar

3 ripe bananas

1 ½ cups flour

1 teaspoon baking soda

½ teaspoon salt

½ cup unsweetened applesauce

1 cup chocolate chips (Trader Joe’s or Enjoy Life brands are non-dairy)

Instructions:

  1. Preheat oven at 375 degrees
  2. First cream the butter and sugar together .
  3. Next mash in your bananas to the buttercream, once combined add apple sauce until well-mixed.
  4. In a separate bowl combine the flour, baking soda, and salt. You want to make sure it is well sifted so you do not get an uneven distribution of ingredients. No one likes biting into a baking soda chunk!
  5. Add the banana/butter/sugar mess with the above ingredients, mixing until it forms a nice batter, then add the chocolate chips.
  6. Lightly grease muffin tin, then fill each section 2/3 of the way full with batter
  7. Bake at 375 for 20 minutes, or until muffins are golden brown on top. Use a toothpick to make sure the center is done to your liking.
