I have always enjoyed the delicious simplicity of these garlic veggies with rice. This enjoyment has increased significantly recently, as we have moved to Iowa and now have our own fresh asparagus patch. (Asparagus was not impressed by the weather in central Florida.) Additionally, we now grow our own mushrooms, which have exceptional taste when picked fresh. Thus, this recipe allows us to use two of our favorite fresh foods and combine them into one easy, filling meal.

Regular button mushrooms from the grocery store will work well in this recipe. If you are looking to try something new or add a slight flavor twist to this recipe, we recommend using baby bellas or oyster mushrooms. Recipe: Garlic Veggies

Prep & Cook Time: 20 min
Serves 4

Ingredients

  • ¼ c margarine (we use non-dairy earth balance, but any butter-like substance will work)
  • 2 cloves garlic
  • 1 tsp salt (to taste) (may substitute garlic salt if fresh garlic not available)
  • 1 lb fresh asparagus, broken into pieces
  • 1 c fresh mushrooms, chopped (we recommend baby bella, oyster, or white button mushrooms)
  • 1 can chickpeas, drained
  • 4 cups cooked rice

Instructions

  1. Heat margarine in large saucepan on medium heat. Add garlic, salt, and mushrooms, then cook until aromatic, approximately 2-3 minutes.
  2. Add asparagus pieces and sauté until tender, approximately 5-6 minutes. During this step, add more margarine, if needed.
  3. Stir in chickpeas and cook until warmed, adding more salt if desired.
  4. Serve immediately with steamed rice.
