Why would you want to make plum cobbler? The best answer is that it is delicious. The honest answer is that sometimes you look in your refrigerator and notice a large pile of somewhat wilted fruit you forgot about, but don’t want to waste. Either way, see below for a tasty plant-based recipe. This recipe is easily adapted to other stone fruits, such as peaches or apricots, if you prefer.

Recipe: Plum Cobbler

Prep & Cook Time: 55 min
Serves 6

Ingredients:

Filling

7 cups plums, sliced (roughly 10 plums)

1/2 cup firmly packed brown sugar

1 tablespoon tapioca four

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

Topping

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup firmly packed brown sugar

5 tablespoons butter substitute (we used Earth Balance)

Plums, ripe

Instructions:

Preheat the oven to 375 degrees.

Toss the plums in brown sugar, tapioca flour, salt, cinnamon, and vanilla extract. Let the filing mixture sit for 10 minutes.

For the topping, mix the almond milk and lemon juice. In another bowl, mix the flour, baking powder, baking soda, salt, and brown sugar. Mix the dry ingredients together. Then add butter substitute to the dry ingredients. Once the dry ingredients and butter are well-mixed, then add the milk/lemon juice combo and stir all ingredients together.

Put the filling in 13×9 inch pan; then spread the topping dough over the filling. Bake for 40 minutes or until topping is golden brown.
